Slammin' Sweet Potato Fries

What is better than french fries? Sweet potato fries!  They're lightly crispy on the outside, creamy smooth on the inside and they're baked so they're healthier than if we'd fried them.  There might not be any spicy ingredients in this recipe but you could easily dash them with some pepper flakes or cook them with chile infused oil otherwise they are the perfect the way they are.  Great as an accompaniment to a spicy main dish!

Ingredients

  • 2 large sweet potatoes peeled
  • 2-3 tablespoons olive oil
  • salt and pepper to taste

Directions

  1. Preheat the oven to 450.  Meanwhile, peel and slice the sweet potato into 1/2 inch thick fries.  Arrange the fries in a baking pan.  Coat the sliced sweet potatoes with olive oil.  Season with salt and pepper.
  2. Bake the fries for 10-15 minutes and turn them.  Bake for another 10-15 minutes.  Depending on the calibration of your oven, the altitude, the alignment of the planets, and any other number of variables your fries may cook slighty faster or slower than mine.  Keep and eye on them.  I don't want to hear, "But, Matt!  My nom noms got burnt."
  3. That is all.  Go forth and eat sweet potato fries.

    Whoa. I should never look at anything this fantastic past 2am. Now I'm craving a late night snack and wishing I had sweet potatoes. Nice blog!
