Spicy Minted Cucumber Salad
The combination of sweet honey, tart lime, spicy thai chiles and fiery cayenne pepper flakes balance with the crisp coolness of cucumber and mint, in this recipe. Simple, light and refreshing - a great counterpart to a rich main dish.
Ingredients
- 2 medium cucumbers
- 1 lime juiced
- 1-2 thai chiles, chopped finely
- 1 tablespoon honey
- 4-5 mint leaves torn or chiffonade (See tip below)
- pinch of salt
- a sprinkle of red chile flakes for color
Garnish
- sprig of mint
Directions
- Peel alternating strips from each cucumber to make them real purty leaving stripes of green and white from end to end. Slice into coins.
- Chiffonade the mint leaves. If you're not familiar with a chiffonade, see the tip below.
- Whisk honey and lime juice until the honey dissolves. Add salt and pepper.
- Add sliced cucumber, chiles and chopped mint to the dressing. Toss to coat and refrigerate to let the flavors combine for at least an hour before serving.
Tips
To Chiffonade just stack the mint leaves and roll them into a tube. Slice the mint "tube" the way you'd slice a green onion. This slice will leave you with narrow strips of mint.

I love cucumber and mint together. I make something similar but without the chile pepper. Never thought to make it spicy. :D Very nice recipe.

In Thailand there is a sugar or palm sugar syrup used, instead of honey and honestly, Iwouldn´t like the salad with honey. Greetz from Chiang Mai Thailand
Yeah, this isn't all that authentic. I just try to use honey as a sweetener to replace sugar because of it's health benefits. You would normally use palm sugar in this though. Some use vinegar and some use lime juice as well.
